Guijuelo: This is located in Salamanca, although its pigs grow in the pastures of different regions of Castilla y León, Castilla-La Mancha, Extremadura and Andalusia, eating acorns among holm oaks and cork oaks. The trick of this DO is that their hams remain exposed for longer in the drying rooms, located at more than 1000 meters of altitude. For this reason they require less salt and are characterized by a sweeter flavor.
