Origin.- The ham comes from pigs obtained from the Landrace, Large-Wite and Duroc Jersey breeds. Only those pieces that come from females and castrated males are used.
Characteristics of the Ham.- Rounded shape, with reddish rind and leg and shiny cut, fat partially infiltrated into the muscle mass, meat with a delicate flavor, very low salt content (between 0 and 5% guaranteed), selecting fatty meat from soft consistency and yellowish color, soft flavor and extremely pleasant to the palate.
