Free-range 50% Iberian Ham is one of the delicasies of this artisan producer made from iberian pigs. It comes from Iberian pigs fed with natural feed of their own formula and pastures in the meadows. This Iberian Ham has been cured in natural drying rooms and cellars for more than two years
D.O.P. Guijuelo: This is located in Salamanca, although its pigs grow in the pastures of different regions of Castilla y León, Castilla-La Mancha, Extremadura and Andalusia, eating acorns among holm oaks and cork oaks. The trick of this DO is that their Iberico ham remain exposed for longer in the drying rooms, located at more than 1000 meters of altitude, for this reason they require less salt and are characterized by a sweeter flavor.
